Cook soba noodles according to package directions; drain, then rinse with cold water and drain again.

Whisk together parsley, miso, water, rice vinegar, and ½ tsp honey in a small bowl until smooth; set miso sauce aside.

In a medium bowl, toss shrimp with remaining ½ tsp honey, ginger, garlic, salt, and pepper until evenly coated.

Heat a grill pan over high heat and coat with cooking spray. Add shrimp and cook 2 minutes per side until done; remove from pan.

Add green onions to the hot grill pan and cook 1 minute per side until well marked; remove and coarsely chop.

In a medium bowl, combine cooked noodles, chopped green onions, sesame oil, and lime juice; toss to coat.

Divide noodle mixture among plates and sprinkle with sesame seeds. Top with grilled shrimp and drizzle miso-ginger sauce over top.
