Whisk together the olive oil, soy sauce, Worcestershire sauce, balsamic vinegar, honey, minced garlic, smoked paprika, and black pepper in a bowl or zip-top bag to make the marinade.

Add the sirloin tip cubes to the marinade, toss to coat, seal, and refrigerate for at least 2 hours — overnight is better for this cut.

Remove the beef from the fridge 30 minutes before cooking. Thread onto skewers, alternating with onion chunks and bell pepper pieces, leaving a little space between pieces. Pat the beef surfaces dry so they sear rather than steam.

Heat the grill to high (450–500°F) and oil the grates. Grill skewers 3–4 minutes per side, turning a quarter-turn each time, until charred outside and 130–135°F inside for medium-rare (8–10 minutes total).

Rest the skewers 5 minutes before serving. Finish with flaky salt and a squeeze of lemon if desired.
